Transform the humble lettuce into the star of the show with this flavoursome Korean salad. This simple side dish curtesy of maangchi.com is quick and easy to make, adding a spicy kick to buffets, BBQ’s and rice dishes.
Korean chili flakes (gochugaru) have a wonderful fruity, smoky aroma but if they are difficult to obtain you could use a small amount of regular chili powder in its place. The salad won’t have the same flavour but it will still make a very enjoyable dish.
SANGCHU-GEOTJEORI
Serves 4
INGREDIENTS:
1 green or red leaf lettuce (about 250g)
2 garlic cloves, minced
1 spring onion chopped
½ small onion, sliced thinly
2 tablespoons soy sauce
1 teaspoon fish sauce (or salt)
1 teaspoon sugar
1 tablespoon white vinegar
2 tablespoons hot pepper flakes (Gochugaru)
1 tablespoon toasted sesame oil
1 tablespoon toasted sesame seeds
Method:
Wash and drain the lettuce. Shake to remove excess water.
Tear the lettuce into bite size pieces and set aside.
Combine garlic, spring onion, sliced onion, soy sauce, fish sauce, sugar, vinegar, hot pepper flakes and toasted sesame oil in a large mixing bowl and mix it well until the sugar is well dissolved.
Add the lettuce to the seasoning mixture and mix it gently by hand.
Sprinkle with the sesame seeds and serve it right away.
