Here’s a wonderful summer cheesecake dessert that’s not only incredibly easy and quick to make but looks and tastes fantastic too.
MASCARPONE AND LIME TORTE
Serves 4-6
INGREDIENTS:
200 g ginger biscuits, crushed
50 g butter, melted
2 x 250 g tubs mascarpone cheese
finely grated juice and zest of 2 limes
50 g icing sugar, sifted
To decorate:
plain chocolate leaves
a few seedless grapes
caster sugar
METHOD:
Mix together the biscuits and the butter and press into the bottom of a 18 cm loose bottomed tin.
Beat the cheese, lime juice and zest and icing sugar together. Spread over the base and chill for 30 minutes.
Wash the grapes then roll in the caster sugar. Decorate the torte with the grapes and chocolate leaves. Chill until required.
Sounds delicious. I can’t wait to try it. I like mascarpone mixed with coffee and then put in a glass with melted chocolate and whipped cream.
