Finding this recipe again took me back to when my children were young and actually showed an interest in helping me in the kitchen.
These crunchy squares were one of the first things we made together, so this one’s for the kids – however big they’ve grown!
COCONUT CORNFLAKE SQUARES
Makes 18
INGREDIENTS:
100 g + 1 tablespoon butter
100 g soft brown sugar
75 g desiccated coconut
75 g rolled oats
25 g cornflakes
1 tablespoon clear honey
METHOD:
Preheat the oven to 170 C /Gas 3.
Grease a 17 x 30 cm shallow, rectangular cake tin with the tablespoon of butter.
In a large bowl mix together the sugar, coconut, oats and cornflakes.
Melt the honey and remaining butter together in a small saucepan over a low heat. Pour into the dry ingredients and mix well.
Spoon the mixture into the cake tin and level off. Bake in the oven for 30 minutes or until the top is golden brown.
Remove from the oven and cut into 18 squares. Leave in the tin until completely cold before serving.
I am a big kid when it comes to these! Just can’t say no!!
