Carottes râpées – French grated carrot salad

Carottes râpées translates to grated carrots and this classic French side salad is as simple as its name.

Grated carrots and chopped shallot tossed in a classic French dressing and chilled until ready to serve.

The honey is optional depending on the sweetness of the carrots.

CAROTTES RÂPÉES
Servings: 4

INGREDIENTS:
450 g carrots, peeled
½ lemon, juiced
3-4 tablespoons olive oil
1 tsp Dijon mustard
1-2 teaspoons honey (opt)
salt and freshly ground black pepper to taste
1 shallot, finely chopped
a little chopped fresh parsley to garnish

INSTRUCTIONS:

Grate the carrots in a food processor or with a box grater and set aside.

In a salad bowl, combine the Dijon mustard, lemon juice, honey (if using), olive oil, salt and pepper.

Add the carrots  and  shallots and toss well. Cover and refrigerate for at least one hour to allow the dressing to be absorbed.

Taste and adjust seasoning if necessary. Serve.
