
I found this treasure of a recipe in an old copy of a BBC Good Food mag.
I am a real glutton for mince pies and the first time I tried these delicious little cakes I thought I’d died and gone to heaven.
They are so light and morish, they make an excellent alternative to traditional mince pies.
LITTLE MINCE PIE CAKES
Makes 12
INGREDIENTS:
175 g self raising flour
100 g light muscovado sugar
1 teaspoon mixed spice
175 g softened butter
3 eggs
2 tablespoons milk
140 g mincemeat
icing sugar for dusting
paper cases
METHOD:
Preheat the oven to 190C/Gas 5. Line 12 small bun tins with paper cases.
Put all the ingredients, except for the mincemeat and icing sugar, into a large bowl and beat with a wooden spoon for 2-3 minutes until light and fluffy.
Put a small dessert spoon of the mixture in the bottom of each paper case and top with a rounded teaspoon of mincemeat. Cover with another small spoonful of cake mix and smooth over.
Bake in the centre of the oven for 15-18 minutes until golden and firm.
Cool on a wire rack before dusting with icing sugar. Serve warm or cold.
