I decided to call it Martha’s cocktail because after a few glasses you will be dancing in the street.
The tequila does pack a hidden punch so if you prefer something a little less potent you could dilute with spritzer or increase the ratio of water melon to tequila.
To make a simple syrup just place equal amounts of water and sugar in a saucepan (eg: 100 ml water, 100 g sugar) and heat gently to dissolve the sugar. Bring to the boil and simmer for a minute or two then leave to cool before using.
3 parts watermelon puree
1 part tequila
½ part fresh lime juice
slices of lime
Mix together the watermelon puree, tequila and lime juice.
Sweeten to taste with the simple syrup.
To serve, pour into glasses over ice and decorate with a slice of lime.
