honey glazed carrotsCooking carrots with honey, rather than simply glazing them at the end, allows the sweetness to soak in as they cook. This works especially well with larger, older carrots.

HONEY GLAZED CARROTS WITH SESAME SEEDS
Serves 4


INGREDIENTS:

450 g carrots, peeled and cut into batons
50 g butter or margarine
2 tbsp honey
pinch salt
235 ml water
1 tbsp sesame seeds, toasted

METHOD:

Put the carrots into a medium sized pan with half the butter or margarine, half the honey and a pinch of salt.

Add the water, bring to the boil, uncovered and cook rapidly until the liquid has all but evaporated and the carrots are tender, about 8 minutes.

Add the remaining butter or margarine and honey and cook until a thick syrup forms to coat the carrots, 3-4 minutes.
Serve sprinkled with the sesame seeds.
