This courgette salad from The Woks of Life is a light, refreshing side dish that’s quick and easy to make.
Use a spiralizer to create long courgette noodles, or slice the courgette into fine matchsticks by hand. The thinner the strands, the more of the delicious dressing they will absorb.

COURGETTE SALAD CHINESE-STYLE
Serves 4

INGREDIENTS:

680 g courgettes (about 3 medium)
1 teaspoon salt
2 teaspoons sugar
¼ teaspoon Sichuan peppercorn powder (or ground white pepper)
1½ teaspoons sesame oil
1 tablespoon light soy sauce
1 tablespoon fresh lemon juice
1 tablespoon rice vinegar
1 tablespoon minced garlic
1 teaspoon chili oil (optional)
2 teaspoons toasted sesame seeds

METHOD:

Trim the ends off the courgettes and cut each in half lengthwise. Scoop out any large seeds from the middle. Using a julienne peeler, spiralizer, or sharp knife cut the courgettes into long thin strands or noodles.

Place the courgettes strands in to a bowl and sprinkle with the salt. Toss it well ands set aside on he counter for 20 minutes.

In a small bowl make the dressing by combining the sugar, Sichuan peppercorn powder, sesame oil, light soy sauce, lemon juice and rice vinegar. Stir until the sugar is completely dissolved.

After 20 minutes, drain the courgettes in a colander then and gently squeeze out some of the liquid.

Right before serving, mix the courgette with the prepared dressing, minced garlic and chilli oil if using. Garnish with sesame seeds, and serve immediately.
