
Summer is here, and it’s time for a bbq!
This creamy American-style potato salad is the perfect side dish for grilled meats, smoky flavours, and laid-back outdoor eating.
SOUR CREAM POTATO SALAD
serves 4
INGREDIENTS:
450 cooked new potatoes, sliced or cut into large dice
100 g cucumber, diced
1 small onion, finely chopped
½ tsp celery seed
pinch black pepper
¾ tsp salt
2 hard boiled eggs
175 ml sour cream
60 ml mayonnaise
2 tbs sweet tomato relish
1 tsp whole grain mustard
METHOD:
Carefully blend the potatoes, cucumber, onion, celery seed, salt and pepper together in a serving dish.
Cut the egg whites into pieces and add to the potato mixture.
In a separate bowl mash the egg yolks and combine with the sour cream, mayonnaise, relish and mustard. Fold gently into the potatoes.
Chill for at least 30 minutes before serving
