The delicate flavour of tilapia is perfect for this savoury Cajun seasoning mix. If tilapia isn’t available cod fillets would make a decent substitute.
SOUTHERN FRIED TILAPIA
Serves 2
INGREDIENTS:
2 tilapia fillets
onion powder
garlic salt
1 egg – beaten
2 -3 tablespoons flour
ΒΌ teaspoon each: cinnamon, nutmeg, paprika, chilli powder, cumin powder, dried sage
oil for shallow frying
Lemon wedges for serving
METHOD:
Rinse and pat dry the tilapia fillets and season with onion powder and garlic salt.
Mix the flour with the herbs and spices in a shallow dish.
Dip the tilapia in the egg and then in the flour mixture, making sure it is thoroughly coated.
Heat the oil in a frying pan or wok and add the tilapia fish – fry for about 2 minutes, then turn and fry for a further 2 minutes until the fish is cooked through.
Serve immediately with the lemon wedges.
