Southern fried tilapiaThe delicate flavour of tilapia is perfect for this savoury Cajun seasoning mix. If tilapia isn’t available cod fillets would make a decent substitute.

Serves 2


2 tilapia fillets
onion powder
garlic salt
1 egg – beaten
2 -3 tablespoons flour
¼ teaspoon each: cinnamon, nutmeg, paprika, chilli powder, cumin powder, dried sage
oil for shallow frying
Lemon wedges for serving


Rinse and pat dry the tilapia fillets and season with onion powder and garlic salt.

Mix the flour with the herbs and spices in a shallow dish.

Dip the tilapia in the egg and then in the flour mixture, making sure it is thoroughly coated.

Heat the oil in a frying pan or wok and add the tilapia fish – fry for about 2 minutes, then turn and fry for a further 2 minutes until the fish is cooked through.

Serve immediately with the lemon wedges.
