Mango tuna with tropical salsa

Tuna steaks with mango salsa

You can almost feel the sun on your skin and the sand beneath you feet when you tuck into these tuna steaks and mango salsa.
A refreshing and  colourful dish with a tropical twist.

Serves 4


1 medium, ripe mango, peeled and cut into chunks
4 x 175 g tuna steaks
1 level tablespoon light muscavado sugar
juice ½ lime
1 tablespoon olive oil
salt and black pepper
Fruit salsa:
1 medium, ripe mango, peeled and diced
1 avocado, peeled and diced
3 spring onions, sliced
juice 1-2 limes
15 g fresh coriander, chopped
½-1 green chilli, deseeded and finely chopped
salt and black pepper


Place the mango chunks, sugar and lime juice in a food processor and blend until smooth.

Place the tuna steaks in a plastic bag and tip in the puree. Tie the bag and shake gently to coat the steaks. Refrigerate for 1-1 ½ hours.

Combine everything for the salsa together, adding chilli to taste, and season with the salt and pepper. Leave to stand for 1 hour.

Remove the tuna steaks from the bag and pat off the excess marinade with kitchen paper, leaving a thin film coating the steaks. Season with the salt and pepper.

Heat a large frying pan until hot. Add the oil and tip around to coat the base of the pan. Once it is very hot add the tuna and sear on one side. Leave for two minutes then turn.

Continue to cook until just done but still pink in the middle, 1-2 minutes, depending on the thickness of the steak. Serve with the salsa.
