A bat out of hell?

bobotiOops  . . . . Sorry  wrong meatloaf!

In my opinion though, this meatloaf from South Africa is definitely more tasty especially when served up with sautéed garlic potatoes and a simple green salad.

BOBOTIE
Serves 6

INGREDIENTS:

25 g margarine
2 onions, diced
1 eating apple, peeled and diced
1 clove garlic, finely chopped
2 eggs
25 g breadcrumbs
3 thick slices of bread
100 g sultanas
1½ tablespoons curry powder
1 tablespoon mango chutney
900 g  minced beef
50 g flaked almonds
4 bay leaves
300 ml milk
seasoning to taste

METHOD:

Pre-heat the oven to 180C/Gas 4.

Melt the margarine in a frying pan and sauté the onion, garlic and apple for 5 minutes, or until softened. Stir in the curry powder and cook for 1-2 minutes.

Put the bread in a shallow dish, pour over the milk and set aside.

In a large bowl mix together the beef, breadcrumbs, one egg, chutney, almonds and sultanas. Stir in the onion and apple mixture and season well.

Squeeze out the excess milk from the bread and reserve. Mash the bread into the meat mixture.

Spread the mixture into a lightly greased pie dish, arrange the bay leaves on the top and bake in the oven for 30 minutes.

Lightly whisk the remaining egg with the reserved milk. Season lightly with salt and pepper. Remove the bay leaves and pour the egg mixture over the meat. Stand in a pan of hot water and bake for 1 hour or until the meat is cooked and the top is golden.
