Hot and spicy chicken wings

I discovered this recipe quite by accident when I was looking for a decent pizza base.

It claims to be a Domino’s copy cat recipe for their hot and spicy wings. Having never eaten the original wings from Domino’s I can’t vouch for its authenticity but what I can say is that these wings are delicious, easy to make and economical. Three darn good reasons to give them a go in my book.

Served with some nice creamy coleslaw and crisp potato wedges or rustic oven chips you will have a tasty, filling meal with out too much hassle.

Don’t be put off by the amount of heat in the sauce. Once it coats the wings it mellows dramatically, just enough to give you a nice kick without having you running for the fire extinguisher!

HOT AND SPICY CHICKEN WINGS
Serves 3-4

INGREDIENTS:

18 large chicken wings
1 tablespoon vegetable oil
¼ teaspoon salt
100 g plain flour
85 g margarine
1 ½ tablespoons white wine vinegar
pinch cayenne pepper
pinch garlic powder
dash Worcestershire sauce
1 teaspoon Tabasco sauce
6 tablespoons piri piri sauce

METHOD:

Preheat oven to 200C/Gas 6.

Cut the wings into two pieces to make a drum and a flat. In a bowl toss the wings with the oil, and salt.

Place into a large plastic bag, and dredge with the flour. Shake to coat evenly. Remove wings from the bag, shaking off excess flour, and spread out evenly on oiled foil-lined baking sheets. Do not crowd.

Bake in the center of the oven for about 15-20 minutes, turn the wings over, and cook another 15-20 minutes, or until the wings are cooked through and browned.

Just before the wings have finished cooking make the sauce:

Melt the butter for the sauce in a small saucepan over a low heat.

Stir in all the remaining ingredients and mix well. Cook for a minute or two then remove from the heat and set aside.

After the wings are cooked, transfer to a large mixing bowl. Pour the sauce over the hot wings and toss with a spoon or spatula until completely coated.

Serve immediately.
