Lentil and Pearl Barley Vegetable Soup

Food revolution network summitSpring is sprung, the grass is riz, the bird is on the wing
now ain’t that absurd? I always thought the wing was on the bird!

Now that we’re officially in to Spring I’ve decided it’s time to reassess my diet. I’ve done so much comfort eating over the last few months that my body definitely needs a healthy phase.

Encouraged by the first veggies plucked from my poly tunnel last week – baby swede and carrots – my resolution was strengthened further by the contents of my weekly newsletter from The Food Revolution Network.

The news letter was about a doctor – Neal Barnard – who claims to have found a winning formula in the battle against alzheimer’s and Diabetes amongst other things. . . . and it’s mostly thanks to a vegan diet.

Slow Roast Belly Pork and Red Cabbage

Slow Roast Belly Pork and Red Cabbage

I love belly pork and this is one of my favourite ways of cooking it.
The red cabbage can also be cooked on it’s own as a side dish to roast meat or an excellent accompaniment to sausage and mash.
